It’s one of those make-once, use-it-all-week recipes—perfect for toast, wraps, bowls, or as an easy snack.

Cashew Cream Spread with Tomatoes and Sprouts Recipe


Servings: Makes about 1 cup (240 ml)—enough to generously top 4–6 slices of bread | Prep Time: ~5 minutes | Soak Time: 15 minutes or overnight | Cook Time: NA    


Ingredients


  • 1 cup (140 grams) raw cashews, soaked

  • 1/4 cup (60 ml.) water, more as needed

  • 2 tbsp. (30 ml.) extra virgin olive oil

  • 1 tbsp. (15 ml.) lemon juice

  • 1 small garlic clove

  • 1/4 tsp. (1.25 ml.) sea salt

  • Black pepper, to taste


For Serving


  • Sliced fresh tomatoes (any color)

  • Microgreens or sprouts

  • Good bread, toasted if desired


Directions


  1. Soak the cashews in hot water for 15 minutes or overnight, then drain.

  2. Add the soaked cashews, water, olive oil, lemon juice, garlic, salt, and pepper to a blender or food processor.

  3. Blend until completely smooth and creamy, scraping down the sides as needed. Add more water, a tablespoon at a time, until your desired consistency is reached.

  4. Spread generously on toast or sandwich bread.

  5. Top with sliced tomatoes, sprouts, and a drizzle of olive oil or flaky salt if desired.


Spice It Up


Blend in a pinch of smoked paprika or a few fresh basil leaves. For a tangier flavor, add 1 tsp. (5 ml.) white miso paste or nutritional yeast.


Make It Yours


Swap in roasted garlic for a mellow depth.

Use as a wrap spread, veggie dip, or base for bowls and grain salads.


Pairs Well With


Marinated cucumbers, lentil salad, roasted red peppers, or a chickpea mash sandwich filling.

Variation 1: Herby Cashew Cream Spread

Fresh and bright—great on tomato toast, pita, or veggie platters.

  • 2 tbsp. (8 grams) chopped fresh herbs (such as parsley, basil, chives, or dill)

  • Optional: 1/2 tsp. (2.5 ml.) lemon zest


Directions


Blend herbs and lemon zest into the finished spread or pulse them in at the end for a flecked texture.


Variation 2: Spicy Cashew Cream Spread

This version adds a bold, tangy kick—perfect in wraps or dolloped on grain bowls.


Add to base recipe


  • 1/2 tsp. (2.5 ml.) crushed red pepper flakes or 1/2 fresh chili, chopped

  • Optional: 1/2 tsp. (2.5 ml.) apple cider vinegar or hot sauce for brightness


Directions


Blend chili and vinegar into the spread along with the other ingredients. Taste and adjust spice to preference.
