Cashew Cream Spread with Tomatoes and Sprouts Recipe

Ingredients
1 cup (140 grams) raw cashews, soaked
1/4 cup (60 ml.) water, more as needed
2 tbsp. (30 ml.) extra virgin olive oil
1 tbsp. (15 ml.) lemon juice
1 small garlic clove
1/4 tsp. (1.25 ml.) sea salt
Black pepper, to taste
For Serving
Sliced fresh tomatoes (any color)
Microgreens or sprouts
Good bread, toasted if desired
Directions
Soak the cashews in hot water for 15 minutes or overnight, then drain.
Add the soaked cashews, water, olive oil, lemon juice, garlic, salt, and pepper to a blender or food processor.
Blend until completely smooth and creamy, scraping down the sides as needed. Add more water, a tablespoon at a time, until your desired consistency is reached.
Spread generously on toast or sandwich bread.
Top with sliced tomatoes, sprouts, and a drizzle of olive oil or flaky salt if desired.
Spice It Up
Blend in a pinch of smoked paprika or a few fresh basil leaves. For a tangier flavor, add 1 tsp. (5 ml.) white miso paste or nutritional yeast.
