Curry Flatbread with Lentils, Greens & Spiced Veggies Plantsy Vegan Eats

Ingredients
For the Lentils
1 tbsp. (15 ml.) olive oil
1/2 onion, chopped
2 cloves garlic, minced
1 tsp. (5 ml.) ground cumin
1 tsp. (5 ml.) turmeric
1/2 tsp. (2.5 ml.) paprika or berbere spice
1 cup (200 grams) red or brown lentils, rinsed
3 cups (720 ml.) water or vegetable broth
1/2 tsp. (2.5 ml.) sea salt
For the Greens
1 tbsp. (15 ml.) olive oil
1 small bunch kale, collard greens, or spinach, chopped
1/4 onion, thinly sliced
1 clove garlic, minced
Pinch of salt
Optional: 1 tbsp. (15 ml.) lemon juice or apple cider vinegar
For the Saucy Veggies
1 tbsp. (15 ml.) olive oil
1/2 onion, diced
1 medium carrot, grated or chopped
1 cup (160 grams) chopped tomatoes (fresh or canned)
1/2 tsp. (2.5 ml.) ground ginger
1/4 tsp. (1.25 ml.) ground cinnamon
Salt and pepper, to taste
For Serving
2 large pieces injera or soft flatbread (or 4 small rounds)
Fresh parsley or cilantro, chopped
Optional: cooked beets, cabbage, or spiced chickpeas for extra toppings
Directions
Heat olive oil in a pot over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and spices, then stir in lentils and broth. Bring to a boil, then reduce heat and simmer for 20 to 25 minutes, until lentils are soft. Add salt and mash slightly if desired.
Heat oil in a skillet over medium heat. Add onion and cook 3 minutes. Add garlic and greens. Cook until wilted and tender, about 5 to 7 minutes. Season with salt and a splash of lemon juice or vinegar to brighten.
Sauté onion and carrot in oil until softened. Add tomatoes and spices. Simmer for 10 to 15 minutes until thick and saucy. Season to taste.
Lay flatbread on a plate. Spoon the lentils, greens, and veggies into sections or rows. Garnish with herbs and serve warm.
Spice It Up
Use berbere for heat or add cayenne to the lentils. A pinch of smoked paprika gives a deeper flavor to the veggies.
