Directions


1.     Heat the coconut oil in a medium skillet over medium heat.


2.     Add the diced apples and sauté for 3 to 4 minutes, stirring occasionally, until they begin to soften.


3.     Stir in the maple syrup, cinnamon, nutmeg, vanilla extract, and sea salt.


4.     Continue cooking for 8 to 10 minutes, stirring often, until the apples are tender and the sauce is glossy and thickened.


5.     Stir in the lemon juice, if using, and cook for 1 more minute.

• 3–5 tbsp. (45–75 ml.) ice water


Directions


1.     In a mixing bowl, whisk together flour, sugar, and salt.


2.     Add cold vegan butter and cut it in using a pastry cutter or fork until the mixture resembles coarse crumbs.


3.     Add ice water, 1 tablespoon at a time, mixing just until the dough holds together when pressed.


4.     Form into a disk, wrap in parchment, and chill in the fridge for 30 minutes.


5.     Roll out to about 1/8 inch (3 mm) thick and cut into circles or rectangles for hand pies.


6.     Fill with a spoonful of caramelized apples, fold, crimp edges, and bake at 375°F (190°C) for 20 to 25 minutes or until golden.


Transform It into a Baked Crisp

4.     Sprinkle the topping over the apples.
