Vegan Caramel Apples with Chopped Peanuts Recipe
The apples in this classic vegan caramel apples recipe are dipped in a rich, sticky caramel made from coconut milk and maple syrup—no dairy or corn syrup required. Rolled in chopped peanuts for crunch, they’re nostalgic, fun to make, and perfect for fall gatherings or edible gifting. Let them cool completely for a candy-shop finish or enjoy them slightly warm for gooey indulgence.
Servings: 6 | Prep Time: 15 minutes | Cook Time: 20 minutes (plus cooling time)
Ingredients
• 6 small crisp apples, washed and dried completely
• 3/4 cup (180 ml.) full-fat coconut milk (shake well before using)
• 1/2 cup (120 ml.) maple syrup
• 1/2 cup (90 g.) coconut sugar
• 1 tbsp. (15 ml.) almond butter or tahini
• 1/4 tsp. (1.5 g.) sea salt
• 1/2 tsp. (2.5 ml.) vanilla extract
• 3/4 cup (100 g.) chopped roasted peanuts
• 6 popsicle sticks or wooden skewers
Directions
1. Line a baking sheet with parchment paper and insert a stick firmly into the top of each apple. Set aside.
2. In a medium saucepan, combine coconut milk, maple syrup, coconut sugar, almond butter, and sea salt.
3. Bring to a boil over medium heat, stirring frequently.
4. Reduce heat to medium-low and simmer, stirring often, for 15 to 20 minutes or until thickened and golden.
5. Remove from heat and stir in vanilla extract. Let cool for 5 to 7 minutes to thicken further.
6. Dip each apple into the caramel, turning to coat. Let excess drip off.
7. Immediately roll in chopped peanuts and place on prepared sheet.
8. Let apples cool at room temperature until the caramel is set, about 30 minutes.
Make It Yours
• Swap peanuts for crushed pretzels, pistachios, or shredded coconut.
• Add a pinch of cinnamon or pumpkin pie spice to the caramel.
• Drizzle with melted dark chocolate for a layered treat.
Pairs Well With
• Hot apple cider or chai tea
• Movie night or outdoor gathering
• Wrapped in parchment and twine as a homemade gift
Add a Chocolate-Dipped Base
• Once the caramel has set, melt 1/2 cup (90 g.) vegan dark chocolate chips with 1 tsp. (5 ml.) coconut oil.
• Dip the bottom of each caramel apple into the melted chocolate and let excess drip off.
• Set back on parchment to harden, or refrigerate for 10 minutes to speed things up.
• For extra flair, roll the chocolate-dipped base in crushed cookies, granola, or cacao nibs before it sets.
Storage Tips for Events
• After the caramel is fully set, wrap each apple tightly in wax paper or parchment and secure with twine or a twist tie.
• Store in the refrigerator for up to 3 days. Let sit at room temperature for 10 to 15 minutes before serving.
• If stacking in a box or basket, place a square of parchment between each apple to prevent sticking.
Autumn Spiced Caramel Variation
• For a fall-inspired twist, add the following to the caramel mixture while it simmers:
• 1/2 tsp. (1 g.) ground cinnamon
• 1/4 tsp. (0.5 g.) ground ginger
• 1/8 tsp. (0.25 g.) ground cloves or allspice
• Replace half of the maple syrup (1/4 cup or 60 ml.) with reduced apple cider for added depth.
• Simmer the apple cider separately until reduced by half before adding to the caramel pot.
• Proceed as directed, stirring well to incorporate the spices.
